top-fermenting yeast: Also known as saccharomyces cerevisiae, top fermenting yeast drifts to the top during the fermentation process. As this type of yeast cannot ferment some sugars, the resulting beer is sweeter. This yeast works the best at warmer temperatures.

viscosity: The “thickness” of a liquid.

yeast: A substance that is part of the fungus family and is instrumental in the making of beer.
