fermentation: The process during which yeast is used to convert sugar to alcohol.
germination: The process of a seed sprouting.
grist: Milled grains or the result of the grain being separated from chaff.
hardness: A term used to describe the amount of calcium and magnesium in water. Hard water has more calcium and magnesium in it.
head: The foam that forms on top of a beer as the beer is poured.
homebrew: A beer that is made at someone’s home.
hops: The female flower from the hop plant that is used in beer as both a flavor enhancer and as a preservative.
IBU scale: See International Bitterness Units scale.
ice beer: A type of beer that has a higher alcohol content because its temperature is lowered until water ice crystals start to form. The ice crystals are then removed, as well as ice that has formed around other particulates in the beer.
International Bitterness Units scale: A measure of bitterness, with a higher number indicating more bitterness.
